Basic Chicken Sauté with Honey-Orange Sauce

Serves: 4  Time: Chicken 7 min; Sauce 8 min

Note:  Timing for sauces presumes some prep was done while chicken was cooking.
Suggested accompaniments take 15 minutes or less to prepare.

 

Basic Chicken Sauté:
2 Tbsp flour
1/4 tsp salt
4 boneless, skinless chicken-breast halves (about 5 oz each), tenderloin (also called a tender or fillet) removed
2 tsp oil, preferably canola

  1. Mix flour and salt in a plastic food bag. Add chicken, close bag and shake to coat evenly.

  2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook, turning once, 5 minutes or until golden and opaque near center. Remove to a serving plate.

  3. While chicken cooks, prepare sauce.

Honey-Orange Sauce:
Good with:

Steamed baby spinach and couscous with raisins.
1 tsp freshly grated orange peel
1/2 cup fresh orange juice
1/2 cup canned 99% fat-free chicken broth
1 Tbsp honey
1 tsp minced garlic
1/4 cup chopped parsley

  1. Add orange peel, juice, broth, honey and garlic to skillet. Boil gently 4 minutes or until slightly thickened.

  2. Stir in parsley; spoon over chicken.

 

 

BBQ Pork with Sweet Potatoes & Apples

Serves: 4  Time: Prep 10 min; Cook 17 min

Per Serving:  308 cal, 20 g pro, 44 g car, 5 g fiber, 6 g fat (2 g saturated fat), 56 mg chol, 521 mg sod

 

Garlic-flavor nonstick seasoning spray
2 Tbsp barbecue sauce
2 Tbsp chopped mango chutney or orange marmalade
2 tsp soy sauce
One 12-oz pork tenderloin
2 Royal Gala or other red apples, quartered, cored and cut in 3/4-in. wedges
3/4 tsp curry powder
1/4 tsp salt
2 small sweet potatoes (1 lb), peeled, cut in half crosswise, then thinly sliced lengthwise
8 scallions, ends trimmed

  1. Heat oven to 500°F or 550°F. Line 2 jelly-roll pans with foil; coat foil with nonstick seasoning spray.

  2. Mix barbecue sauce, chutney and soy sauce; spread over pork. Place pork on 1 side of 1 lined pan, apples on other side. Coat apples with seasoning spray; sprinkle with 1/4 tsp curry powder and 1/8 tsp salt.

  3. Spread sweet potatoes in the other pan; coat with seasoning spray, then sprinkle with the remaining curry powder and salt.

  4. Roast 12 minutes or until potatoes are tender. Remove to serving platter; cover to keep warm. Put scallions in pan; coat with seasoning spray. Roast 5 minutes or until meat thermometer inserted in thickest part of pork registers 160°F and scallions and apples are tender. Slice pork; add to platter along with apples and scallions.

Hot Dog Hoagies

1 medium onion, thinly sliced (about 1 cup), divided
1 pkg. (16 oz.) Oscar Mayer® XXL Deli Style Beef Franks

1/2 cup A.1. Thick & Hearty Steak Sauce

6 French bread rolls or hoagie rolls, partially split

 

PREHEAT oven to 350°F. Place half of the onions in even layer on bottom of 13x9-inch baking dish.

PARTIALLY slice each frank lengthwise in half, being careful to not cut all of the way through frank. Place franks, cut sides down, in single layer over onions; top with remaining onions. Drizzle evenly with steak sauce.

BAKE 20 minutes or until onions are tender. Serve franks in rolls topped with onions and sauce.

 

 

Cowboy Kabobs

18 wooden skewers (10 inch)

1/3 cup A.1. Original Steak Sauce

1/3 cup Kraft® Original Barbecue Sauce

2 tsp. Kraft® Prepared Horseradish

1-1/2 lb. beef top round steak, cut into 1/2-inch strips

9 pearl onions

1 large red or green pepper, cut into 9 strips

 

SOAK skewers in water for at least 30 minutes. Meanwhile, mix steak sauce, barbecue sauce and horseradish until well blended; set aside.

THREAD steak strips onto skewers; place an onion or pepper strip on the end of each skewer. Place kabobs in glass dish; coat with steak sauce mixture. Cover. Refrigerate 1 hour, turning occasionally.

PLACE kabobs on grill over medium coals. Grill 4 to 6 minutes or until steak is cooked through, turning occasionally.

 

 

Easy Chicken and Potatoes

1 pkg. (about 2 lb.) bone-in chicken breast halves

1 lb. potatoes, cut into wedges

1/2 cup Kraft® Zesty Italian Dressing

3 Tbsp. Kraft® 100% Grated Parmesan Cheese

1 Tbsp. Italian seasoning

 

PLACE chicken and potatoes in 13x9-inch baking pan. Pour Italian dressing over chicken and potatoes.

SPRINKLE evenly with Parmesan cheese and Italian seasoning.

BAKE at 400°F for 1 hour or until chicken is cooked through.

4 cups POST® Cocoa PEBBLES Cereal

6 squares BAKER'S® Semi-Sweet Baking Chocolate

1/2 cup light corn syrup

1 Tbsp. butter or margarine

1/2 tsp. vanilla

White decorating gel

 

PLACE cereal in large bowl.

MICROWAVE chocolate, corn syrup and butter in large microwavable bowl on HIGH 2-1/2 minutes, stirring after 1-1/2 minutes. Stir in vanilla.

POUR chocolate mixture over cereal; mix well. Shape into 18 (3-inch long) football shapes, using slightly moistened hands. Place on waxed paper; cool completely. Use decorating gel to add lacings to footballs.
